烤牛奶
烤牛奶是近两年来在网络上很流行的一种做法,我看了很多配方,多数是用蛋黄来制作,加了淡奶油,这样做出的烤牛奶肯定口感是很醇厚的,奶香也会很浓郁,但同时也存在现实的问题,比如用了蛋黄,那蛋白怎么处理?还有更头疼的,好一点儿的淡奶油一盒多数1升装,只用一点点,剩下的就很难保存,非常容易造成浪费。这是很多想尝试烤牛奶的朋友望而却步的一个重要原因!
我今天分享的烤牛奶做法,就是避免了以上说到的问题,鸡蛋用的是全蛋,只是用牛奶来制作,而不用添加淡奶油,为了让口感更加醇厚,我是用炼乳来增加甜度的,大家都知道,炼乳也是奶制品,再增甜的同时也让口感更好,当然了,如果连炼乳也没有,也可以用糖,我在具体的步骤里会介绍用量,用这个配方做出的烤牛奶,虽然是使用全蛋,也没有加淡奶油,但口感依然特别好,也很紧实,不会松散,嫩嫩滑滑的有入口即化的感觉,特别好吃,而且在材料上也不会造成浪费,整体性价比很高。

  • 炼乳35g
  • 玉米淀粉25g
  • 蛋黄1个

Steps to make 烤牛奶

  • 1.先来做准备工作,准备食材。
  • 2.模具准备,我用的是六寸的戚风蛋糕模具,底部及四周刷油备用。
  • 3.将一个鸡蛋一盒牛奶加入奶锅中,加入炼乳,如果没有炼乳也可以用等量的白糖来代替,利用蛋抽,充分搅拌均匀。
  • 4.加入玉米淀粉搅拌至顺滑无颗粒,加入芝士片,芝士片的加入也是为了增加风味,如果实在没有,不放也是可以的。
  • 5.将盛有食材的奶锅小火加热,并不停搅拌,当食材开始结块并且变得浓稠的时候,关火。
  • 6.同时刮刀快速,不停搅拌,可以把结块搅散,最终状态是顺滑,浓稠的糊状。
  • 7.倒入模具中,稍微晾凉以后密封,放入冰箱冷藏定三小时以上。
  • 8.定型完毕,取出脱模具,切成自己喜欢的形状,表面刷蛋黄液。
  • 9.利用自己手中的设备,烤箱,空气炸锅等等,我用的是空气中微波炉,选择定温烘烤模式,以190度进行预热,中层,烤15-20分钟,表面出现焦黄上色的部分就可以出炉了。
  • 10.趁热吃,嫩嫩滑滑的,入口即化,太好吃了。
