冰皮月饼---新手都能百分百成功的月饼
本来今天是想上一款热菜的,可朋友要求一定要把上次鱼做的冰皮月饼发上来......因为中秋了,想折腾几个忽悠家里的小伙伴.....
也是哦,趁着小伙伴们还懵懂纯真,还能忽悠的时候要好好珍惜,让小伙伴长大后无论身处何方都能永远记住家的味道,记住那个小时候经常忽悠他的妈。

第一次吃冰皮月饼的时候,觉得很神奇,因为那次的神奇,所以一直对冰皮情有独钟,所以每年无论多忙,都会做上几个冰皮,既可以满足一样家里小朋友又可以回味一下第一次吃冰皮月饼的感觉。

  • 粘米粉35克
  • 澄面20克
  • 菠萝馅75克
  • 红豆馅75克

Steps to make 冰皮月饼---新手都能百分百成功的月饼

  • 1.把所有材料准备好。
  • 2.把材料中的A(糯米粉、粘米粉、澄面)倒进大碗中,搅拌均匀。
  • 3.材料中的B(牛奶、植物油、糖粉)倒进大碗中,搅拌均匀,直到材料充分混合。
  • 4.把混合后的B,牛奶糖粉水慢慢倒入A中。
  • 5.边倒边搅拌,直至充分混合,没颗粒状后盖上保鲜膜,静止20分钟。
  • 6.锅中烧开水,把静止后的冰皮糊放进锅中大火隔水蒸25分钟(要记得盖上保鲜膜可用一个大碟子盖住)。
  • 7.喜欢口感Q一点亲,可以像鱼一样带上一次性手套用手继续揉搓面糊10分钟。
  • 8.待面粉摊凉后,将面糊平均分成8小份。
  • 9.炒一些熟粉做手粉。
  • 10.内馅平均分成8小份。
  • 11.带上一次性手套,再上沾小许手粉,将冰皮放在手心用另外一只手压扁。
  • 12.放进内馅,包好,捏紧收口。
  • 13.往月饼模中撒入小许手粉,晃均后再把多余的粉磕出来,然后放入包好的月饼胚。
  • 14.在案板上撤上小许手粉,月饼模朝下轻轻一压,压出形状即可。
  • 15.冰皮月饼就做好了,做好的月饼最好摆进冰箱里,冷藏几个小时后再吃,这样口感谢会更好。
  • 16.冰皮面糊蒸好后,要等完全冷却后再包馅,否则会非常粘手,很难包。
  • 17.在包馅之前,用手均匀地沾上手粉,这样会比较容易操作,但如果就算沾上手粉后还是非常粘手的话,那可能是冰皮面糊还没完全蒸熟。
