Steps to make 广式鸭润腊肠面包卷

  • 1.用料:高筋面粉150克,蛋黄1个,白砂糖20克,盐1/4小勺,鲜酵母6克,鲜牛奶80克,黄油15克,广式鸭润腊肠(蒸熟)4根。
  • 2.将高粉、蛋黄、白砂糖、牛奶倒入大碗。
  • 3.揉成均匀面团,放入冰箱冷藏一夜。
  • 4.取出,加入黄油、盐揉匀。
  • 5.再加入酵母,揉匀。
  • 6.放入面包机中,搅拌30分钟。
  • 7.面团能拉出薄膜。
  • 8.滚圆,放入大碗,盖上保鲜膜,发酵。
  • 9.面团发至2-3倍大。
  • 10.取出排气,分割成4等分,滚圆,松弛20分钟左右。
  • 11.擀成椭圆形,
  • 12.顺长边卷起,
  • 13.搓成长条状。
  • 14.将搓好的长条缠绕在腊肠上,接头处捏紧。排入烤盘,盖上保鲜膜放温暖湿润处进行最后发酵约50分钟。
  • 15.面团体积发酵至1.5-2倍大,表面刷上蛋液,放入已预热好的烤箱中层,上下火180度,烘烤15-20分钟。
  • 16.出炉后立即转晾架上放凉。
