一道来自云南的美味——臭菜煎鸡蛋
臭菜,学名羽叶金合欢,是云南西双版纳、普洱等地最具特色的野生蔬菜,也深受邻近的老挝、缅甸、泰国的许多民族喜爱。臭菜浑身长刺,属木质藤本,食用部分为植株的嫩芽、嫩叶、嫩稍。在采收食用部分时就可以闻到一种特殊的臭味,但象臭豆腐一样,闻着臭吃着香。其实臭菜所散发出来的气味在植物学中是被称为“芬芳”的,只不过在前面加了“特异”两个字。臭菜煎鸡蛋比香椿煎鸡蛋还让人欢喜、惊艳、美味,滋味的妙处难以用语言来形容。

  • 1.材料:臭菜一小把,鸡蛋3个
  • 2.1、把臭菜的老茎叶摘除。
  • 3.2、捡好的臭菜放水里清洗干净。
  • 4.3、洗好的臭菜切成细碎。
  • 5.4、鸡蛋打在碗里搅匀。
  • 6.5、切好的臭菜放入鸡蛋液里,加入适量盐搅拌均匀。
  • 7.6、油锅上火,油温热后小火倒入鸡蛋液,一面煎熟翻过来再煎另一面即可。
