凉拌虾仁蚕豆
立夏将至,蚕豆纷纷上市。我们这一带立夏日,必吃蚕豆,听婆婆说,过去,家家户户都吃蚕豆,一般都是用猪油炒一下,有的放点咸菜炒,可都是连皮吃的,每到中午,小娃们端着一碗蚕豆,抢着坐在正间的捣麻糍的石臼上,说是这样吃了,腿脚稳健,好干活。
蚕豆吃法很多,可以烧蚕豆饭,炒咸菜,直接水煮,凉拌加了虾仁,荤素搭配,营养丰富。

  • 干红辣椒2个
  • 白芝麻少许

  • 2小勺
  • 禾然有机糙米醋1小勺
  • 六月鲜特级原汁酱油1大勺
  • 白糖1小勺

Steps to make 凉拌虾仁蚕豆

  • 1.食材如上图。
  • 2.蚕豆去壳。
  • 3.再剥掉外皮。
  • 4.锅里放开水,加入2小勺盐,把蚕豆放进去焯水2分钟左右。
  • 5.捞出沥干水分备用。
  • 6.把挑去虾线的虾仁放入开水里焯至变色。
  • 7.捞出来和蚕豆放一起。
  • 8.小碗里放入1小勺白糖,加入禾然有机糙米醋1小勺。
  • 9.再加入1大勺六月鲜特级原汁酱油。
  • 10.倒入适量开水拌匀。
  • 11.热锅放油烧热,加入蒜泥炒香。
  • 12.加入干红辣椒圈炒香。
  • 13.加入调料汁烧开。
  • 14.淋在虾仁蚕豆上拌匀。
  • 15.盛盘喽。
  • 16.撒上白芝麻。
  • 17.来一勺吧!
