奶香红豆芋圆汤

Steps to make 奶香红豆芋圆汤

  • 1.芋头切成片,放在笼格上面蒸熟,切片后比较容易蒸熟,水开后约需要10分钟。切片时不用去皮,洗干净就可以,蒸好后皮很容易去掉,还不用怕手痒痒。
  • 2.去皮后的芋头150克,这个芋头含水量较小,如果是煮出来的芋头或者是蒸好的热芋头,含水量要大一些。
  • 3.把80克木薯淀粉和20克粘米粉加入芋头中,用手揉搓,把面粉跟芋头揉均匀。加一点儿粘米粉,圆子的口感会更好,软中带弹更好吃。
  • 4.根据面团的具体情况,添加一些牛奶,把芋头面团揉均匀,软硬适中就可以了。
  • 5.揉好的面团搓成小手指粗的条,再分割成小圆子,搓开的时候用力要均匀,可以适当用一点儿手粉会好操作一些。
  • 6.切好的圆子如果不及时下锅,需要盖上保鲜膜防止变干。
  • 7.小锅加水上火烧开,烧水搓圆子可以同时进行,两不误。
  • 8.水开后下入圆子煮熟,芋圆全都漂起来且没有硬心就煮好了。
  • 9.捞出来过凉水备用。芋圆一次可以多做一些,过完凉水后分装成小份冻在冰箱中,吃的时候取出来直接下锅煮就可以了。
  • 10.煮圆子的汤倒出去,锅中留下一碗,放上之前已经煮熟的红豆,加糖煮开。这里也可以用蜜红豆,自己煮的豆子比较烂,有豆沙的感觉,糖的用量也可以根据情况调整。
  • 11.把牛奶和芋圆下锅,同红豆沙一起煮开,装入碗中,就可以上桌了,可以放一点儿玫瑰花和干桂花,好看又好吃。
