蛋白霜饼干
雪花饼干、圣诞树饼干、圣诞老人饼干、天使饼干......,用不同颜色的蛋白霜填充过后的饼干不再单调,孩子们都抢着吃呢。

  • 黄油45g
  • 蛋黄液10g
  • 牛奶15g
  • 糖粉30g
  • 低筋面粉60g
  • 玉米淀粉30g

Steps to make 蛋白霜饼干

  • 1.黄软提前室温软化,放入无油无水的容器中低速打发至软化。
  • 2.加入糖粉30克继续低速打发使至混合。
  • 3.蛋黄液分三次加入,使黄油慢慢把鸡蛋液吸收。
  • 4.再加入牛奶继续低速打发混合。
  • 5.筛入低筋面粉和玉米淀粉。
  • 6.切拌至没有干粉,揉成光滑的面团。面团擀至8mm厚的片状,使用3D模具按压出喜欢的形状
  • 7.送入预热好180℃的烤箱中层,上下火烤15-20分钟即可
  • 8.制作蛋白霜部分,首先蛋清分离,蛋白放入无水无油打发蛋白的容器中,加入糖粉100克打发。
  • 9.从低速转高速打发。
  • 10.食用色素加入到打发好的蛋白霜中搅拌均匀,将调好颜色的蛋白霜装入裱花袋中。
  • 11.取出烤好放凉的造型曲奇,在曲奇上勾边后填充颜色。
